Instructions

  1. Prepare the Feta: Cut the feta cheese block into rectangular thick slices to ensure they hold shape during frying.
  2. Prepare the Phyllo Strips: Lay out one sheet of phyllo dough and brush lightly with olive oil or melted butter. Fold the sheet lengthwise to create a long strip suitable for wrapping.
  3. Wrap the Feta: Place one feta slice at the bottom of the phyllo strip. Fold the strip over the feta in a triangular flag fold pattern, continuing until the entire piece is sealed to prevent cheese from leaking during frying.
  4. Repeat: Continue wrapping the remaining feta pieces using the same method with the remaining phyllo sheets.
  5. Heat Oil: Heat a generous amount of frying oil in a skillet over medium heat until shimmering but not smoking.
  6. Fry the Triangles: Carefully fry the phyllo-wrapped feta triangles for 2–3 minutes per side, turning gently until they are golden brown and crispy on all sides.
  7. Drain Excess Oil: Remove the triangles from the skillet and place them on paper towels to absorb excess oil.
  8. Prepare the Hot Chili Honey: In a small bowl, whisk together honey, chili flakes, and lemon juice until well combined.
