  • 1 tbsp fresh mint, finely chopped 🌿

  • Black pepper to taste

For the Wrap:

  • 68 rice paper sheets
  • Olive oil or spray for frying
  • Optional: edible flowers or sesame seeds for garnish

Instructions

  1. In a bowl, combine whipped feta, pistachios, mint, lemon zest, and black pepper. Mix until creamy and well combined. Soften each rice paper sheet by dipping in warm water for 5–10 seconds. Place on a clean surface.
  2. Spoon about 1.5 tablespoons of filling in the center. Fold like a small parcel—first the sides, then roll tightly into a sealed bundle. Optional: decorate the top with an edible flower or sprinkle of sesame seeds before cooking.
  3. Air-fry at 200°C (392°F) for 6–8 minutes until golden and glassy, or pan-fry in a little oil until crispy on both sides. Serve warm with lemon wedges, hot honey, or a yogurt-herb dip.
