Ingredients

Scale

Vegetables

  • 1216 asparagus spears, trimmed
  • Zest of 1 lemon
  • Optional: fresh parsley or microgreens for garnish

Others

  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 4 oz (115 g) burrata cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Asparagus: Toss the trimmed asparagus spears in olive oil until evenly coated. Season with salt and black pepper to enhance their natural flavor. Spread them out in a single layer on the prepared baking sheet to ensure even roasting.
  3. Roast: Place the baking sheet in the oven and roast the asparagus for 12–15 minutes. Roast until the stalks are tender yet still have a slight crispness, especially at the tips, which should become lightly browned and crispy.
  4. Prepare the Burrata: Take the burrata cheese out of the refrigerator about 10 minutes before serving to allow it to soften a bit, which makes it easier to tear or slice and enhances its creamy texture.
  5. Assemble: Arrange the roasted asparagus on a serving platter. Tear or slice the softened burrata cheese over the top of the asparagus. Sprinkle the lemon zest evenly on top for a bright citrus note. Garnish with fresh parsley or microgreens if desired to add a pop of color and freshness.
  6. Serve: Serve immediately while the asparagus is warm and the burrata is creamy for the best flavor combination. This dish works wonderfully as a light appetizer or a side to complement your main course.

Notes

  • For extra flavor, drizzle a little balsamic glaze over the finished dish.
  • If you prefer your asparagus softer, roast for up to 18 minutes.
  • Fresh lemon juice can also be added for more brightness.
  • Use burrata right before serving as it can lose its creamy texture if kept out too long.
  • To make the dish vegan, substitute burrata with a plant-based creamy cheese alternative.
