For the Fish:

  • 500g firm white fish fillets (like cod, basa, or tilapia)
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/4 cup cornstarch
  • 1 egg white

For the Sauce:

  • 1 tbsp cooking oil
  • 1/2 onion, sliced
  • 1 bell pepper (any color), sliced
  • 1/4 cup water
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

  1. Prepare the Fish: Cut the fish fillets into bite-sized pieces. Season with salt and pepper. In a bowl, whisk the egg white. Toss the fish in the egg white, then coat well in cornstarch.
  2. Fry the Fish: Heat enough oil in a wok or deep pan for frying. Fry the fish pieces in batches until they are golden brown and crispy. Remove with a slotted spoon and set on a paper towel to drain.
  3. Make the Sauce: In a separate pan, heat 1 tbsp of oil. Sauté the sliced onion and bell pepper for 2-3 minutes until slightly tender.
  4. Finish the Sauce: Add water, vinegar, sugar, ketchup, and soy sauce to the pan. Bring to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens and becomes glossy.
  5. Combine & Serve: Gently toss the crispy fish pieces into the sauce until they are fully coated. Serve immediately while the fish is still crispy. Garnish with sesame seeds and fresh scallions if desired.
