Crust

  • 200g chocolate cookie crumbs
  • 100g melted butter

  • 200ml melted dark chocolate
  • 100ml white chocolate, melted for swirling

Instructions

  1. Prepare the crust: In a medium bowl, combine the chocolate cookie crumbs with the melted butter until the mixture resembles wet sand. Press this evenly into the base of a springform cake pan to form the crust. Set aside.
  2. Make the cheesecake batter: In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition to ensure a smooth batter.
  3. Layer the batter and chocolate: Pour half of the cheesecake mixture over the crust in the pan. Drizzle the melted dark chocolate evenly on top, then pour the remaining cheesecake mixture over it to cover.
  4. Add white chocolate swirls: Drizzle the melted white chocolate over the top of the batter in thin streams, then use a toothpick or skewer to gently swirl it into the surface, creating a marbled effect.
  5. Bake the cheesecake: Preheat your oven to 160°C (320°F). Bake the cheesecake for approximately 50 minutes until the edges are set but the center still slightly jiggles when shaken gently.
