Chicken Chili:
- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans (such as cannellini or great northern, drained and rinsed)
- 1 can (4 oz) diced green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 cup corn (fresh, frozen, or canned)
Serving Suggestions:
- 1 cup sour cream (for serving, optional)
- 1 cup shredded Monterey Jack cheese (for serving, optional)
- Fresh cilantro, chopped (for garnish, optional)
- Prepare Ingredients: In a slow cooker, add the chicken, white beans, green chilies, onion, garlic, cumin, chili powder, salt, and pepper.
