  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup corn (fresh, frozen, or canned)

Serving Suggestions:

  • 1 cup sour cream (for serving, optional)
  • 1 cup shredded Monterey Jack cheese (for serving, optional)
  • Fresh cilantro, chopped (for garnish, optional)

Instructions

  1. Prepare Ingredients: In a slow cooker, add the chicken, white beans, green chilies, onion, garlic, cumin, chili powder, salt, and pepper.
  2. Add Broth: Pour in the chicken broth and stir gently to combine.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
  4. Shred Chicken: Remove chicken, shred, and return to the pot.
