Ingredients

Scale

Salmon and Crust

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 lemon, zested and juiced
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • ¼ cup panko breadcrumbs
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the crust: In a small bowl, combine the Dijon mustard, lemon zest, lemon juice, and chopped dill. Mix well to create a flavorful spread.
  3. Season the salmon: Pat the salmon fillets dry with a paper towel and season lightly with salt and black pepper. Brush each fillet evenly with the mustard-lemon-dill mixture to coat the top and impart flavor.
  4. Add breadcrumbs: Sprinkle panko breadcrumbs evenly over the top of each salmon fillet. Press gently to help them adhere to the mustard mixture, forming a crispy crust once baked.
  5. Bake: Place the prepared salmon fillets on the lined baking sheet and bake in the preheated oven for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the crust is golden brown.
  6. Serve: Remove from the oven and serve immediately. Garnish with lemon wedges and accompany with your favorite side dishes for a complete meal.

Notes

  • For best results, use fresh salmon fillets with skin removed or skin on according to preference.
  • Panko breadcrumbs provide a lighter, crispier texture than regular breadcrumbs.
  • Fresh dill enhances flavor, but dried dill is a suitable substitute if fresh is unavailable.
  • Adjust the amount of lemon juice or zest based on desired tanginess.
  • Use a cooking thermometer to check that salmon reaches an internal temperature of 145°F (63°C) for safe consumption.
