For the Tofu:

  • 1 block (14 oz / 400g) extra-firm tofu, pressed and cubed
  • ½ cup dill pickle juice (from the jar)
  • 1 tbsp olive oil

For the Coating:

  • ½ cup panko breadcrumbs
  • ¼ cup all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For Dipping (Optional):

  • ½ cup Greek yogurt or plant-based yogurt
  • 1 tbsp chopped fresh dill
  • 1 tsp lemon juice
  • Pinch of salt

Instructions

  1. Press the Tofu: Wrap tofu in paper towels and place a heavy object on top. Press for 15–20 minutes to remove excess moisture. Cut into bite-sized cubes.
  2. Marinate in Pickle Juice: Place tofu cubes in a shallow bowl and pour pickle juice over them. Let marinate for at least 20–30 minutes for maximum flavor. Drain and pat lightly dry.
  3. Prepare the Coating: In a bowl, mix panko, flour, cornstarch, garlic powder, dried dill, onion powder, paprika, salt, and pepper.
  4. Coat the Tofu: Lightly toss tofu cubes with olive oil. Roll each piece in the breadcrumb mixture, pressing gently so the coating sticks well.
  5. Bake: Preheat oven to 400°F (200°C). Arrange tofu bites on a parchment-lined baking sheet. Bake 25–30 minutes, flipping halfway through, until golden and crispy.
  6. Prepare the Dip (Optional): Stir together yogurt, fresh dill, lemon juice, and salt until smooth.
  7. Serve: Serve tofu bites hot and crispy with dill yogurt dip. Perfect as a snack, appetizer, or protein add-in for bowls and wraps.
