For the Horchata:

  • 1 cup uncooked white rice
  • 2 cups water (for soaking)
  • 2 cups milk of choice (dairy or oat/almond)
  • 2 tbsp maple syrup or condensed milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch of salt

To Finish:

  • 2 shots fresh espresso or strong cold brew
  • Ice cubes
  • Optional: cinnamon stick or dusting of cinnamon for garnish

Instructions

  1. Rinse Rice: Rinse rice and soak in water overnight or at least 6 hours.
  2. Blend Rice: Blend soaked rice with soaking water until very smooth. Strain through cheesecloth or nut milk bag.
  3. Prepare Horchata: Add milk, syrup, vanilla, cinnamon, and salt to the strained rice milk. Stir well and chill.
  4. Assemble Drink: Fill glasses with ice. Pour horchata ¾ of the way up. Gently pour espresso over the back of a spoon to float it on top for layered effect.
  5. Garnish and Serve: Garnish with a dusting of cinnamon or a cinnamon stick.
