Ingredients

Scale

Cake

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1/2 cup Baileys Irish Cream

Baileys Buttercream Frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup Baileys Irish Cream
  • 2 tsp vanilla extract
  • 23 tbsp heavy cream (optional)

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking and ensure easy removal.
  2. Mix dry ingredients: In a large bowl, sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt, ensuring they are evenly combined.
  3. Add wet ingredients: Crack the eggs into the bowl, then add whole milk, vegetable oil, and vanilla extract. Beat the mixture on medium speed until everything is well incorporated and smooth.
  4. Incorporate boiling water and Baileys: Carefully stir in the boiling water, followed by the Baileys Irish Cream. The batter will be thin, which is expected and helps create a moist cake.
  5. Pour and bake: Divide the batter evenly between the prepared cake pans. Place them in the oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool the cakes: Let the cakes cool in the pans for 10 minutes. Then remove them from the pans and place on wire racks to cool completely before frosting.
  7. Make the frosting: In a large bowl, beat the softened unsalted butter until creamy and light. Gradually add the powdered sugar while beating on low speed until combined.
  8. Add Baileys and vanilla: Pour in the Baileys Irish Cream and vanilla extract. Beat on high speed until the frosting is fluffy and well mixed.
  9. Adjust consistency: If the frosting is too thick, add 2-3 tablespoons of heavy cream one at a time until the desired spreading consistency is achieved.
  10. Frost the cake: Once the cakes have cooled completely, spread the Baileys buttercream frosting evenly over the top of one cake layer, then stack the second layer on top. Continue frosting the top and sides of the entire cake.
  11. Serve and enjoy: Slice the cake, serve, and enjoy the luscious blend of chocolate and Baileys flavors.

Notes

  • For a more intense Baileys flavor, you can brush each cake layer with additional Baileys before frosting.
  • Make sure the cakes are completely cooled before frosting to prevent the buttercream from melting.
  • Use room temperature ingredients for better mixing and smoother batter.
  • Store the cake in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
  • Bring refrigerated cake to room temperature before serving for best flavor and texture.
