Ingredients

Scale

For the Meringue

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar
  • 1 tsp finely ground Earl Grey tea leaves

For the Whipped Cream

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For the Blueberry Compote

  • 1 cup fresh or frozen blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice

Optional Garnish

  • Fresh mint leaves
  • Lemon zest

Instructions

  1. Preheat the Oven: Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper to prevent sticking and prepare for shaping the meringue.
  2. Make the Meringue: In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form. Gradually add granulated sugar while continuing to beat until the mixture becomes stiff and glossy. Gently fold in the cornstarch, white vinegar, and finely ground Earl Grey tea leaves to infuse flavor without deflating the meringue.
  3. Shape the Pavlova Towers: Using a spoon or piping bag, form small towers or rounds of the meringue on the lined baking sheet. Smooth the tops slightly for an even finish.
  4. Bake: Place the meringues in the preheated oven and bake for 60 to 70 minutes. They should be crisp on the outside but remain slightly soft inside. Once done, turn off the oven and let the meringues cool completely inside to avoid cracking.
  5. Prepare the Blueberry Compote: In a small saucepan, combine blueberries, honey (or maple syrup), and lemon juice. Cook over medium heat for 5 to 7 minutes until the mixture thickens slightly. Remove from heat and let cool.
  6. Whip the Cream: Beat the heavy cream with powdered sugar and vanilla extract until soft peaks form, creating a light and airy whipped cream.
  7. Assemble the Towers: Layer the meringue rounds with whipped cream and blueberry compote. Repeat to build 2 to 3 tiers, creating beautiful and delicious pavlova towers.
  8. Serve: Garnish each tower with fresh mint leaves and a sprinkle of lemon zest. Serve immediately to enjoy the perfect texture and freshness.

Notes

  • Ensure egg whites are at room temperature for better volume when whipping.
  • Use a clean, grease-free bowl and beaters for whipping egg whites to achieve stiff peaks.
  • Letting the meringues cool inside the oven prevents sudden temperature changes that can cause cracking.
  • Blueberry compote can be made ahead and refrigerated, but allow it to come to room temperature before assembling.
  • For a vegan option, substitute whipped cream with coconut cream and use aquafaba instead of egg whites for meringue.
