Crepes:

  • 2 cups of milk
  • 4 eggs
  • 3 tbsp. Butter, melted
  • 1 tbsp. sugar
  • 1 1/2 tbsp. Vanilla
  • 1/8 tsp. salt
  • 1 1/2 cups flour

Cream Cheese Filling:

  • 18 oz. Cream cheese package, soft
  • 1 1/4 cups of powdered sugar
  • 1 tbsp. Lemon juice
  • 3/4 tsp. Vanilla
  • 1 cup heavy whipping cream
  • 4 tbsp. soft sugar

Strawberry Topping:

  • 4 cups strawberries, sliced

Instructions

  1. Prepare the Crepe Batter: Add eggs, milk, butter, sugar, vanilla, salt, and flour to a blender. Mix for 15-20 seconds until well combined.
  2. Chill the Batter: Refrigerate the batter for at least an hour or overnight.
  3. Cook the Crepes: Heat a nonstick pan, add batter, swirl to form a circle, cook until top is dry and edges release.
  4. Make the Filling: Beat cream cheese, powdered sugar, lemon juice, and vanilla. Whip cream with sugar until stiff peaks form.
  5. Assemble: Fill crepes with cream cheese filling, top with strawberries, roll up, and serve.
