Dry Ingredients:
- 1½ cups (188g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Wet Ingredients:
- ¾ cup (150g) granulated sugar
- ½ cup (120ml) vegetable oil
- 1 cup (240ml) fresh orange juice (from about 3–4 oranges)
- 1 tbsp orange zest (grated peel of 1 orange)
- 1 tsp vanilla extract
- 1 tbsp white vinegar or lemon juice
- Preheat the Oven: Preheat your oven to 175°C (350°F). Grease and line the bottom of an 8-inch round cake pan with parchment paper. Set aside.
- Mix Dry Ingredients: In a mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Stir and set aside.
- Combine Wet Ingredients: In another large bowl, whisk together the sugar and oil. Add in the orange juice, orange zest, and vanilla extract. Mix until smooth.
- Add Acidic Component: Add the vinegar or lemon juice to the wet mixture to activate the baking soda.
- Fold in Dry Ingredients: Gradually fold in the dry ingredients until smooth. Do not overmix.
- Bake: Pour the batter into the cake pan and bake for 30–35 minutes until a toothpick comes out clean.
