Dry Ingredients:

  • 1½ cups (188g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients:

  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 1 cup (240ml) fresh orange juice (from about 34 oranges)
  • 1 tbsp orange zest (grated peel of 1 orange)
  • 1 tsp vanilla extract
  • 1 tbsp white vinegar or lemon juice

Instructions

  1. Preheat the Oven: Preheat your oven to 175°C (350°F). Grease and line the bottom of an 8-inch round cake pan with parchment paper. Set aside.
  2. Mix Dry Ingredients: In a mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Stir and set aside.
  3. Combine Wet Ingredients: In another large bowl, whisk together the sugar and oil. Add in the orange juice, orange zest, and vanilla extract. Mix until smooth.
  4. Add Acidic Component: Add the vinegar or lemon juice to the wet mixture to activate the baking soda.
  5. Fold in Dry Ingredients: Gradually fold in the dry ingredients until smooth. Do not overmix.
  6. Bake: Pour the batter into the cake pan and bake for 30–35 minutes until a toothpick comes out clean.
  7. Cool and Serve: Allow the cake to cool before serving.
