Ingredients

Scale

Dry Ingredients:

  • 1½ cups (188g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients:

  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil or melted butter
  • 1 cup (240g) plain yogurt or curd
  • ¼ cup (60ml) milk (at room temperature)
  • 1 tsp vanilla extract
  • ¾ cup (100g) tutti frutti (plus 1 tbsp extra for topping)
  • 1 tbsp flour (to coat the tutti frutti)

Instructions

  1. Preheat the Oven: Preheat your oven to 175°C (350°F). Grease and line a loaf pan with parchment paper, letting the sides hang slightly for easy removal.
  2. Prepare Tutti Frutti: Toss the tutti frutti with 1 tablespoon of flour in a small bowl to prevent them from sinking during baking.
  3. Mix Wet Ingredients: In a large bowl, whisk together yogurt, sugar, oil (or butter), vanilla extract, and milk until smooth.
  4. Add Dry Ingredients: Sift in the flour, baking powder, baking soda, and salt. Gently fold until just combined.
  5. Combine Tutti Frutti: Fold in the floured tutti frutti gently, reserving some for topping.
  6. Bake: Pour the batter into the pan, top with reserved tutti frutti, and bake for 35–45 minutes until a toothpick comes out clean.
  7. Cool and Serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • You can customize the amount of tutti frutti based on your preference.
  • Ensure all ingredients are at room temperature for best results.
