Dough
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 cup unsalted butter, cold and cubed
- 1 egg
Filling
- 4 oz cream cheese, softened
- 1 teaspoon vanilla extract
Decoration
- Green food coloring, a few drops
- 1/4 cup dough reserved for leaves
- Whole almonds, about 24 for blossoms
- Prepare the dough: In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup granulated sugar, and 1 cup cold, cubed unsalted butter. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs. Add 1 egg and knead just until a smooth dough forms. Wrap in plastic wrap and chill for 30 minutes.
- Shape and bake the rounds: Preheat the oven to 350°F (175°C). Roll out the dough to about 1/4-inch thickness. Using a round cookie cutter, cut out small rounds and place them on a baking sheet lined with parchment paper. Bake for 15 minutes until lightly golden. Remove from oven and let cool completely.
- Make the cream cheese filling: In a bowl, blend 4 oz softened cream cheese with 1 teaspoon vanilla extract until smooth and creamy. Spread a generous layer on each cooled pastry round.
- Create green dough leaves: Take a small portion of the reserved dough and knead in several drops of green food coloring until evenly colored. Shape small pieces into leaves. Place the leaves on top of the cream cheese layer.
- Add almond blossoms and final bake: Press whole almonds onto each pastry in a flower blossom pattern atop the cream cheese and leaves. Return the pastries to the oven and bake for an additional 5 minutes to slightly toast the almonds and set the toppings.
Notes
- Use cold butter to ensure flaky pastry dough.
- Allow the pastries to cool between baking stages to prevent melting the cream cheese topping.
- Green food coloring can be natural (like spinach powder) for a healthier option.
- These pastries are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- For a nut-free version, substitute almonds with sliced strawberries or other fruit toppings.
