Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9-inch pie pan thoroughly with butter to prevent sticking.
  2. Prepare Crust: Roll out the pie crust and carefully fit it into the greased pie pan. Use a fork to prick the bottom of the crust lightly, which helps prevent bubbling during baking.
  3. Cook Spinach & Onion: Heat the olive oil in a skillet over medium heat. Sauté the finely diced onion and minced garlic for about 2–3 minutes until they soften and become fragrant. Add the chopped fresh spinach and continue cooking until wilted, approximately 2 more minutes. Remove from heat and allow the mixture to cool slightly.
  4. Mix Filling: In a large mixing bowl, whisk together the eggs and milk or cream until fully combined. Stir in the ricotta, shredded mozzarella, grated Parmesan, salt, black pepper, and nutmeg if using. Carefully fold in the cooled spinach and onion mixture until evenly distributed throughout the filling.
  5. Assemble & Bake: Pour the prepared filling into the pie crust, smoothing it out evenly. Place the quiche in the preheated oven and bake for 35–40 minutes, or until the filling is set and the top is lightly golden brown.
  6. Cool & Serve: Remove the quiche from the oven and allow it to cool for 5–10 minutes. Garnish with fresh thyme or parsley leaves. Serve warm or at room temperature for the best flavor and texture experience.
