Ingredients

Scale

Shrimp and Seasoning

  • 1 pound large shrimp, peeled and deveined
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

Pasta and Sauce

  • 1 cup dry orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon honey

Additional Ingredients

  • 1/2 cup dried cranberries
  • Fresh parsley, chopped, for garnish

Instructions

  1. Roast the Cranberries: Preheat your oven to 375°F (190°C). Spread the dried cranberries out evenly on a small baking sheet and roast them for 5 to 7 minutes until they become slightly plump and their flavors intensify.
  2. Sauté the Garlic: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, just until fragrant and slightly golden, being careful not to burn it.
  3. Cook the Shrimp: Add the shrimp to the skillet, seasoning them with salt and pepper. Cook for 2 to 3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside to keep warm.
  4. Prepare the Orzo: In the same skillet, add the dry orzo pasta and pour in the chicken or vegetable broth. Bring the mixture to a gentle simmer and cook, stirring occasionally, until the orzo is tender and has absorbed most of the liquid, about 8 to 10 minutes.
  5. Make the Feta Sauce: Stir in the heavy cream, crumbled feta cheese, and honey to the cooked orzo. Continue stirring until the sauce becomes creamy and smooth, coating the pasta evenly.
  6. Combine Shrimp and Cranberries: Return the cooked shrimp to the skillet and gently fold them into the orzo and sauce mixture. Then fold in the roasted cranberries, distributing them evenly throughout the dish.
  7. Garnish and Serve: Sprinkle chopped fresh parsley over the top for a burst of color and fresh flavor. Serve the skillet dish warm for a satisfying meal.

Notes

  • You can substitute chicken broth for vegetable broth to keep the dish vegetarian if omitting shrimp.
  • Adjust the roasting time for cranberries if you prefer them less plump or more caramelized.
  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • Use fresh shrimp instead of frozen for best texture and flavor.
  • Orzo can be replaced with other small pasta shapes if desired, but cooking times may vary.
