Ground Turkey Filling
- 1 lb ground turkey
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 small onion, finely diced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1 tablespoon tomato paste
- 2 tablespoons water
Dill Lemon Honey Feta Cream
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh dill
- 1 small clove garlic, grated
- Black pepper to taste
Wraps
- 4 soft pita breads or flatbreads
- 1 cup shredded lettuce
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup thinly sliced red onion
- Fresh parsley for garnish
- Sauté the Onions: Heat olive oil in a large skillet over medium heat. Add the finely diced onion and cook for 3 to 4 minutes until softened and translucent.
- Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, taking care not to burn it.
- Cook Ground Turkey: Add the ground turkey to the skillet. Break it apart with a spoon and cook until browned and fully cooked through, about 6 to 7 minutes.
- Season the Meat: Sprinkle in paprika, dried oregano, ground cumin, salt, and black pepper. Mix thoroughly so the spices coat the turkey evenly.
- Simmer the Mixture: Stir in lemon juice, tomato paste, and water. Let the mixture simmer for 2 to 3 minutes until it thickens slightly and becomes flavorful. Then remove from heat.
- Prepare the Feta Cream: In a small bowl, combine crumbled feta cheese, Greek yogurt, honey, lemon juice, olive oil, chopped fresh dill, grated garlic, and black pepper. Mix until creamy and smooth.
- Warm the Pitas: Heat the pita breads in a skillet or oven for 1 to 2 minutes until warm, soft, and flexible for wrapping.
- Assemble the Wraps: Spread a generous spoonful of the dill lemon honey feta cream inside each pita. Add a portion of the warm ground turkey mixture, then top with shredded lettuce, diced cucumber, diced tomatoes, and sliced red onion.
- Garnish and Serve: Drizzle additional feta cream over the filling and garnish with fresh parsley. Fold the wraps and serve immediately while warm.
