  • 2 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 3 cloves garlic, minced

  • ½ tsp turmeric
  • Salt and black pepper to taste

For the Flatbread:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • ¾ cup warm water

For the Creamy Feta Yogurt Dip:

  • 1 cup Greek yogurt
  • ½ cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped

For the Platter Add-ons:

  • 1 cup hummus
  • 1 cup cherry tomatoes
  • 1 cucumber, sliced
  • ½ cup Kalamata olives
  • ½ red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate Chicken: In a bowl, mix olive oil, minced garlic, lemon juice, paprika, oregano, cumin, turmeric, salt, and black pepper. Add the chicken thighs and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or preferably overnight to enhance the flavors.
  2. Cook Chicken: Heat a skillet or grill over medium heat. Cook the marinated chicken thighs for 6–7 minutes per side until fully cooked through with a slight char. Remove from heat and let the chicken rest for a few minutes before slicing into pieces.
  3. Prepare Flatbread Dough: In a mixing bowl, combine the flour and salt. Add olive oil and warm water gradually, mixing until a soft dough forms. Knead the dough for about 5 minutes until it becomes smooth and elastic.
  4. Cook Flatbreads: Divide the dough into small balls. Roll each ball thinly on a lightly floured surface. Heat a dry pan over medium heat and cook each flatbread for 1–2 minutes on each side until lightly browned and cooked through.
  5. Make Feta Yogurt Dip: In a bowl, blend Greek yogurt, crumbled feta cheese, olive oil, lemon juice, minced garlic, and chopped fresh dill. Stir until the dip is smooth and creamy.
  6. Assemble Platter: On a large serving board, arrange the sliced chicken, warm flatbreads, hummus, and creamy feta yogurt dip. Add cherry tomatoes, cucumber slices, Kalamata olives, and thinly sliced red onion around the platter.
  7. Garnish and Serve: Sprinkle fresh parsley over the platter and drizzle with extra olive oil. Serve immediately and enjoy your Mediterranean feast.
