For the Flatbread:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • ¾ cup warm water

For the Creamy Feta Yogurt Dip:

  • 1 cup Greek yogurt
  • ½ cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped

For the Platter Add-ons:

  • 1 cup hummus
  • 1 cup cherry tomatoes
  • 1 cucumber, sliced
  • ½ cup Kalamata olives
  • ½ red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lemon juice, paprika, dried oregano, cumin, turmeric, salt, and black pepper. Add the chicken thighs and toss to coat thoroughly. Cover and marinate for at least 30 minutes, or preferably overnight for more intense flavor.
  2. Cook the Chicken: Heat a skillet or grill over medium heat. Cook the marinated chicken for 6–7 minutes on each side, ensuring it is fully cooked and has a slight char. Remove from heat and let it rest before slicing thinly.
  3. Prepare the Flatbread Dough: In a mixing bowl, combine all-purpose flour and salt. Add olive oil and warm water gradually, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Cook the Flatbreads: Divide the dough into small balls and roll each into a thin circle. Heat a dry pan over medium heat and cook each flatbread for 1–2 minutes on each side until lightly browned and cooked through. Set aside and keep warm.
  5. Make the Creamy Feta Yogurt Dip: In a blender or food processor, combine Greek yogurt, crumbled feta cheese, olive oil, lemon juice, minced garlic, and chopped fresh dill. Blend until the mixture is smooth and creamy.
  6. Assemble the Platter: Arrange the sliced chicken, freshly cooked flatbreads, hummus, creamy feta yogurt dip, cherry tomatoes, cucumber slices, Kalamata olives, and thinly sliced red onion on a large serving board. Garnish with fresh parsley and drizzle a little olive oil over the top before serving.
