For the cupcakes:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 eggs
- Zest of 1 large orange
- ½ cup (120ml) fresh orange juice
- ¼ cup (60ml) milk
- 1 tsp vanilla extract
For the orange buttercream:
- ½ cup (115g) unsalted butter, softened
- 1 ¾ cups (220g) powdered sugar
- 1 tbsp orange zest
- 2–3 tbsp fresh orange juice
- A pinch of salt
- (Optional) orange food coloring
- Preheat oven: Preheat oven to 175°C (350°F). Line a muffin tin with cupcake liners.
- Prepare dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar: In a separate large bowl, cream butter and sugar until light and fluffy.
- Add eggs and flavorings: Add eggs one at a time, beating well. Mix in orange zest and vanilla.
- Combine liquids: Combine orange juice and milk in a small cup.
- Alternate mixing: Alternate adding dry ingredients and the juice/milk mixture into the butter mixture. Start and end with dry ingredients.
- Fill cupcake liners: Divide batter into cupcake liners (fill about 2/3 full).
- Bake: Bake for 18–22 minutes or until a toothpick comes out clean. Let cool completely.
- Make the frosting: Beat butter until creamy. Add powdered sugar gradually, mixing well. Stir in zest, juice, and salt. Beat until light and fluffy. Add food coloring if desired.
- Frost cupcakes: Frost cooled cupcakes and decorate with a twist of orange zest or candied peel.
Notes
- You can add extra orange flavor by brushing the cupcakes with a simple orange syrup before frosting.
- For a lighter frosting, you can substitute part of the butter with cream cheese.
