Instructions

  3. Add flour: Remove the saucepan from the heat. Stir in the all-purpose flour all at once. Mix vigorously until the dough pulls away from the sides of the pan and forms a cohesive ball.
  4. Cook dough slightly: Return the pan to medium heat. Cook the dough for 1-2 minutes, stirring constantly to dry it out slightly and help it form a smooth paste. Then, remove from heat and let it cool slightly so the eggs don’t scramble when added.
  5. Incorporate eggs: Add the eggs one at a time into the dough, mixing thoroughly after each addition until the dough is smooth, glossy, and has a pipeable consistency.
