Whipped Ricotta Base

  • 400g full-fat ricotta
  • 1 tbsp olive oil
  • Zest of ½ lemon
  • 1 small garlic clove, grated
  • Salt and pepper to taste

Edible Herb Butter Candle

  • 100g unsalted butter, softened
  • 1 tsp finely chopped rosemary
  • 1 tsp finely chopped thyme
  • ½ tsp garlic powder
  • Pinch of chili flakes (optional)
  • Pinch of salt

To Finish

  • Olive oil, for drizzling
  • Warm sourdough or flatbread, for dipping

Instructions

  1. Make the butter candle: Mix softened butter with herbs, garlic, chili flakes, and salt.
  2. Scoop into a cylindrical silicone mold or shape with parchment into a small log. Press a food-safe candle wick into the center. Freeze until firm.
  3. For the ricotta: Blend ricotta, olive oil, lemon zest, and garlic until smooth and airy. Season to taste.
  4. Spoon whipped ricotta into a shallow bowl, forming a slight well in the center.
  5. Unmold the frozen butter candle and stand upright in the center of the ricotta.
  6. Just before serving, light the candle. The butter will slowly melt into the dip.
  7. Serve immediately with warm bread and a drizzle of extra olive oil.
