Instructions

  1. Prepare the Pita Chips: Preheat the oven to 375°F (190°C). Cut pita breads into triangles and place them in a large bowl. Toss with olive oil, dried oregano, and a pinch of salt until evenly coated. Spread the pita pieces in a single layer on a baking sheet and bake for 10–12 minutes until golden and crisp. Remove from the oven and allow to cool completely.
  2. Make the Whipped Feta: In a food processor or blender, combine the crumbled feta cheese, Greek yogurt, olive oil, lemon juice, salt, and black pepper. Blend until the mixture is smooth and creamy, scraping down the sides as needed to ensure even blending.
  3. Assemble the Board: Spoon the whipped feta into a shallow serving bowl and drizzle lightly with extra olive oil. Arrange the pita chips, cherry tomatoes, cucumber slices, Kalamata olives, roasted red peppers, and fresh dill or parsley around the whipped feta bowl artistically to create an inviting appetizer board.
  4. Serve or Store: Serve the appetizer board immediately for the best texture and flavor, or cover and refrigerate until ready to serve. If chilling, let the pita chips stay at room temperature to maintain crispness.
