Greek Beef Gyros
- 500 g (1 lb) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Roasted Garlic Feta Sauce
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 roasted garlic bulb, cloves peeled
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Pinch of black pepper
Wrap Ingredients
- 4 large pita breads or flatbreads
- 1/2 cup sliced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley for garnish
- Cook the Beef: Heat olive oil in a skillet over medium heat. Add the finely chopped onions and minced garlic and sauté for 2 to 3 minutes until softened and fragrant. Add the ground beef along with oregano, paprika, salt, and black pepper. Cook for 6 to 8 minutes, stirring occasionally, until the beef is browned and cooked through.
- Prepare Roasted Garlic Feta Sauce: In a small bowl or food processor, combine the crumbled feta cheese, plain Greek yogurt, peeled roasted garlic cloves, olive oil, lemon juice, and a pinch of black pepper. Blend or mix until the sauce is smooth and creamy.
- Assemble Wraps: Warm the pita or flatbreads slightly to make them more pliable. Place a portion of the cooked beef on each pita, then add sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives evenly over the meat.
- Add Sauce & Serve: Drizzle the roasted garlic feta sauce over the fillings in each wrap. Garnish with fresh parsley leaves, then fold or roll up the pita tightly. Serve immediately for best flavor and texture.
Notes
- You can substitute ground lamb for ground beef to make the gyros more traditional.
- For a spicier gyro, add a pinch of cayenne pepper or crushed red pepper flakes when cooking the beef.
- To roast garlic, wrap a whole garlic bulb in foil and bake at 400°F (200°C) for about 30 minutes or until soft.
- If pita bread is not available, use tortillas or flatbreads as alternatives.
- Leftover sauce can be stored in the refrigerator for up to 3 days.
