For the Dill Garlic Feta Sauce

  • ½ cup crumbled feta cheese
  • ½ cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, grated
  • 2 tablespoons fresh dill, finely chopped
  • Salt and black pepper, to taste
  • 12 tablespoons water, to thin as needed

Instructions

  1. Cook the Beef: Heat olive oil in a skillet over medium heat. Add the finely diced onion and sauté for 2–3 minutes until softened. Stir in the minced garlic, dried oregano, smoked paprika, salt, and black pepper. Add the ground beef and cook until browned and fully cooked, breaking it up into small pieces as it cooks.

Prepare the Dill Garlic Feta Sauce: In a blender or food processor, combine crumbled feta cheese, plain Greek yogurt, olive oil, fresh lemon juice, grated garlic, finely chopped fresh dill, salt, and black pepper. Blend until smooth and creamy. Add 1 to 2 tablespoons of water as needed to achieve the desired sauce consistency.
  3. Warm the Tortillas: Briefly warm the flour or whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side or microwave them for 15-20 seconds until pliable.
  4. Assemble the Wraps: Lay a warm tortilla flat. Place a layer of shredded lettuce or baby spinach, followed by a generous portion of cooked beef. Top with thin cucumber slices and tomato slices.
  5. Add Sauce and Garnish: Drizzle the dill garlic feta sauce generously over the fillings. Garnish with chopped fresh dill or parsley for added freshness and flavor.
  6. Roll and Serve: Carefully roll up the tortilla, folding in the sides as you go to create a secure wrap. Serve immediately while warm.
