Instructions

  2. Cook the Ground Beef: Add the lean ground beef to the skillet. Cook thoroughly, breaking the meat apart with a spatula, until browned and no longer pink. Season to taste and remove from heat.
  3. Prepare the Lemon Herb Feta Sauce: In a blender or food processor, combine crumbled feta cheese, plain Greek yogurt, olive oil, fresh lemon juice, lemon zest, grated garlic clove, chopped parsley or dill, salt, and black pepper. Blend until smooth and creamy. If the sauce is too thick, add 1–2 tablespoons of water to achieve desired consistency.
  4. Warm the Tortillas: Briefly heat the flour or whole wheat tortillas in a dry skillet or microwave to make them pliable for wrapping.
