Roasted Garlic Feta Sauce

  • 1 whole garlic head
  • 1 tbsp olive oil
  • ¾ cup crumbled feta cheese
  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • Black pepper, to taste

Wraps and Toppings

  • 4 large pita breads or flatbreads
  • 1 cup shredded lettuce
  • ½ cup cherry tomatoes, halved
  • ¼ cup thinly sliced red onion
  • Optional: sliced cucumbers or olives

Instructions

  1. Roast Garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with olive oil, then wrap it tightly in foil. Roast for 30–35 minutes until the cloves are soft and caramelized. Allow to cool, then squeeze the roasted garlic cloves out of their skins.
  2. Cook Beef: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 2–3 minutes until softened and translucent. Add the minced garlic along with the ground beef, dried oregano, cumin, smoked paprika, salt, and black pepper. Cook thoroughly, breaking up the beef, until browned and cooked through.
  3. Make Roasted Garlic Feta Sauce: In a blender or mixing bowl, combine the roasted garlic cloves, crumbled feta cheese, Greek yogurt, lemon juice, olive oil, and black pepper. Blend or mash until you achieve a smooth and creamy consistency.
  4. Warm Wraps: Gently heat the pita breads or flatbreads briefly until they are soft, warm, and pliable—ideal for wrapping without cracking.
  5. Assemble Wraps: Spread a generous layer of the roasted garlic feta sauce on each pita. Top with the cooked Greek beef, shredded lettuce, halved cherry tomatoes, thinly sliced red onion, and optional cucumbers or olives for added freshness and flavor.
