For the Chicken
- 1 ½ lbs (700g) boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 3 garlic cloves, minced

For the Garlic Feta Yogurt Sauce
- ¾ cup crumbled feta cheese
- ½ cup Greek yogurt
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1–2 tbsp warm water (to thin, if needed)
For the Bowl
- 1 cup cooked rice, orzo, or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, thinly sliced
- ½ cup kalamata olives
- 2 tbsp fresh parsley, chopped
- Optional: romaine lettuce or mixed greens

- Cook the Chicken: In a bowl, combine olive oil, garlic, lemon juice and zest, oregano, smoked paprika, salt, and pepper. Coat chicken thoroughly and marinate for 15–30 minutes. Heat a skillet over medium-high heat and cook chicken for 5–6 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Let rest for 5 minutes, then slice.
- Prepare the Garlic Feta Yogurt Sauce: In a bowl, combine feta, Greek yogurt, minced garlic, olive oil, and lemon juice. Blend or whisk until smooth and creamy. Add warm water gradually to reach a drizzleable consistency.
- Assemble the Gyro Bowls: Divide cooked rice or orzo among serving bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and fresh parsley. Drizzle garlic feta yogurt sauce over the bowls. Add optional greens if desired.
