  • Salt & black pepper, to taste

For the Garlic Tzatziki Feta:

  • 1/2 cup Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated cucumber, excess liquid squeezed out
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Salt & black pepper, to taste
  • Optional: 1 tsp fresh dill, chopped

For the Bowl:

  • 2 cups cooked rice, quinoa, or couscous
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • Fresh parsley or dill for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, fresh lemon juice, dried oregano, smoked paprika, minced garlic, salt, and black pepper. Toss the thinly sliced chicken breast in the marinade until fully coated. Let it rest and marinate for at least 15 to 20 minutes to absorb all the flavors.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Place the marinated chicken strips on the hot surface and cook until golden brown and cooked through, about 6 to 8 minutes, stirring occasionally. Remove the chicken from heat and set aside.
  3. Prepare the Garlic Tzatziki Feta: In a blender or food processor, combine the Greek yogurt, crumbled feta cheese, grated cucumber (with excess liquid squeezed out), minced garlic, olive oil, fresh lemon juice, salt, and black pepper. If using, add fresh dill. Blend until smooth and creamy, adjusting seasoning to taste.
  4. Assemble the Bowls: Start with a base of cooked rice, quinoa, or couscous in each bowl. Arrange the cooked chicken on top, followed by cherry tomatoes, diced cucumber, thinly sliced red onion, and Kalamata olives.
