  • 1 small garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • Salt & black pepper to taste

For the Bowl

  • 2 cups cooked rice or quinoa
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ¼ cup Kalamata olives, sliced
  • Fresh herbs for garnish

Instructions

  1. Marinate the Chicken: Toss the cubed chicken breast with olive oil, smoked paprika, garlic powder, dried oregano, lemon juice, salt, and black pepper. Let it marinate for 15 to 30 minutes to absorb all the flavors.
