  • Salt and black pepper, to taste

For the Roasted Garlic Tzatziki Feta

  • 1 head garlic
  • 1 tbsp olive oil
  • ¾ cup plain Greek yogurt
  • ½ cup crumbled feta cheese
  • ½ cup grated cucumber (seeds removed, squeezed dry)
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, finely chopped
  • Black pepper, to taste

For the Bowl

  • 1½ cups cooked rice, quinoa, or lemon herb orzo
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup Kalamata olives, sliced
  • Fresh parsley or dill, for garnish

Instructions

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and caramelized. Let cool, then squeeze out the cloves to use in the sauce.
  2. Marinate the Chicken: In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, dried oregano, paprika, cumin, salt, and black pepper. Add the sliced chicken and toss well to coat. Marinate for at least 30 minutes to infuse the flavors.
  3. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the chicken for 6–8 minutes, turning occasionally until golden and cooked through. Remove from heat and let rest for a few minutes before slicing if needed.
  4. Make the Roasted Garlic Tzatziki Feta: In a bowl, mash the roasted garlic into a smooth paste. Stir in Greek yogurt, crumbled feta, grated cucumber, lemon juice, fresh dill, and black pepper until creamy and well combined.
  5. Prepare the Bowl Base: Add cooked rice, quinoa, or lemon herb orzo into serving bowls as the base layer.
  6. Assemble the Bowls: Top the base with the grilled gyro-style chicken, cherry tomatoes, diced cucumber, thinly sliced red onion, and sliced Kalamata olives.
  7. Finish & Serve: Spoon generous amounts of the roasted garlic tzatziki feta sauce over the assembled bowls. Garnish with fresh parsley or dill and serve immediately while fresh and vibrant.
