Marinated Chicken
- 2 chicken breasts, sliced
- 2 tbsp olive oil
- Zest and juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
Bowl Base and Toppings
- 1 cup cooked rice or quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
Spicy Tzatziki Feta Sauce
- 1 cup plain Greek yogurt
- 1/2 cup cucumber, finely grated and squeezed dry
- 2 tbsp feta cheese, crumbled
- 1 tbsp fresh dill, chopped
- 1 tsp chili flakes or chili paste (adjust to taste)
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Marinate the Chicken: In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and pepper. Add the sliced chicken breasts and mix well to coat. Marinate for at least 20 minutes to allow the flavors to penetrate.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken slices for 5 to 7 minutes until fully cooked through and lightly charred on the edges. Remove from heat and set aside.
- Prepare the Spicy Tzatziki Feta Sauce: In a separate bowl, combine plain Greek yogurt, finely grated and squeezed cucumber, crumbled feta cheese, chopped fresh dill, chili flakes or chili paste, lemon juice, salt, and pepper. Stir well until all ingredients are fully incorporated.
- Assemble the Bowl: Place a cup of cooked rice or quinoa as the base in serving bowls. Arrange the cooked chicken on top, followed by cherry tomatoes, diced cucumber, thinly sliced red onion, and Kalamata olives.
- Finish and Serve: Drizzle the spicy tzatziki feta sauce generously over each bowl. Sprinkle additional crumbled feta cheese if desired. Serve immediately while the chicken is warm.
