Ingredients

Scale

For the Greek Chicken

  • lbs (680 g) boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bowl Base

  • 1½ cups cooked rice or quinoa
  • 1 cup chopped romaine or shredded lettuce
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ small red onion, thinly sliced
  • Kalamata olives (optional)

For the Whipped Garlic Feta

  • ¾ cup Greek yogurt
  • ½ cup crumbled feta cheese
  • 12 cloves garlic, finely grated
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Black pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, ground cumin, salt, and black pepper. Add the chicken thighs or breasts to the marinade and toss to coat thoroughly. Allow the chicken to marinate for at least 30 minutes to enhance flavor and tenderness.
  2. Cook the Chicken: Heat a grill or pan over medium-high heat. Cook the marinated chicken for about 5–7 minutes on each side, until fully cooked through and lightly charred on the outside. Remove the chicken from heat and let it rest for 5 minutes before slicing it into strips.
  3. Prepare the Whipped Garlic Feta: In a blender or food processor, combine Greek yogurt, crumbled feta cheese, finely grated garlic, olive oil, lemon juice, and black pepper. Blend the mixture until it becomes smooth and creamy, forming the whipped garlic feta sauce.
  4. Assemble the Bowls: Start by placing cooked rice or quinoa as the bowl base. Layer on chopped romaine or shredded lettuce, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and Kalamata olives if using. Top each bowl with sliced Greek chicken and a generous dollop of the whipped garlic feta.

Notes

  • For a healthier option, use chicken breasts instead of thighs.
  • You can substitute quinoa with cauliflower rice for a low-carb bowl.
  • Marinate the chicken overnight for more intense flavors.
  • Adjust the garlic quantity in the whipped feta to your taste preference.
  • Kalamata olives are optional but add an authentic briny flavor.
  • This bowl can be stored in the refrigerator for up to 3 days, making it great for meal prep.
  • Reheat chicken separately to maintain its texture before assembling the bowl.
