Ingredients

Scale

For the Chicken and Bowl:

  • 2 cups cooked Greek-style chicken, sliced or shredded
  • 2 cups cooked rice or couscous
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, sliced
  • Olive oil, salt, and pepper, to taste
  • Fresh parsley or dill, chopped, for garnish

For the Creamy Tahini Feta Sauce:

  • 1/2 cup feta cheese, crumbled
  • 3 tbsp tahini
  • 2 tbsp Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 small clove garlic, minced
  • 23 tbsp water, to thin as needed
  • Salt, to taste

Instructions

  1. Marinate and Cook the Chicken: If desired, marinate the chicken in a mixture of olive oil, lemon juice, minced garlic, and oregano for at least 30 minutes to infuse flavors. Then grill or pan-sear the chicken over medium-high heat until golden and fully cooked, approximately 6-8 minutes per side. Once cooked, slice or shred the chicken and set aside.
  2. Prepare the Creamy Tahini Feta Sauce: In a blender or food processor, combine crumbled feta cheese, tahini, Greek yogurt, lemon juice, minced garlic, and salt. Blend until smooth. Gradually add 2 to 3 tablespoons of water to achieve a pourable, creamy consistency that easily drizzles over the bowl.
  3. Assemble the Bowls: Start by placing cooked rice or couscous as the base in each bowl. Top evenly with the sliced or shredded chicken, cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta, and Kalamata olives.
  4. Add the Sauce and Garnish: Drizzle the creamy tahini feta sauce generously over the assembled ingredients. Finish by sprinkling fresh chopped parsley or dill for a burst of herbal freshness.
  5. Serve: Serve the gyro bowls warm or slightly chilled depending on preference. Enjoy a wholesome, Mediterranean-inspired meal that’s rich in flavor and texture.

Notes

  • For best flavor, marinate the chicken for at least 30 minutes or overnight if possible.
  • The sauce consistency can be adjusted by adding more or less water depending on preference.
  • Rice can be substituted with couscous, quinoa, or cauliflower rice for different textures or dietary needs.
  • Gluten-free options are available by choosing gluten-free grains.
  • The gyro bowl components can be prepped ahead for quick assembly at mealtime.
