For the Bowls:

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: warm pita slices on the side

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, minced garlic, dried oregano, paprika, black pepper, salt, and lemon juice. Add the chicken breasts or thighs and coat well with the marinade. Let the chicken marinate for at least 20 minutes to absorb the flavors.
  2. Cook the Chicken: Heat a skillet over medium heat. Cook the chicken for 5 to 6 minutes on each side until fully cooked through and golden brown. Remove from heat and allow the chicken to rest for 5 minutes to retain its juices, then slice it thinly.
  3. Prepare the Tzatziki Sauce: In a small bowl, mix Greek yogurt, grated and drained cucumber, minced garlic, fresh lemon juice, chopped dill, and salt. Stir until well combined. Chill in the refrigerator until ready to serve to let the flavors meld.
  4. Assemble the Bowls: Divide the cooked rice or quinoa evenly into four serving bowls. Top each with the sliced chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
  5. Serve: Drizzle the prepared tzatziki sauce over the bowls and garnish with fresh parsley. Serve each bowl with warm pita slices on the side if desired for a complete meal.
