Greek Chicken Souvlaki

  • 450 g (1 lb) boneless, skinless chicken breasts, cut into chunks
  • 2 tbsp olive oil

  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

Bowl Base

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ small red onion, thinly sliced
  • 1 cup shredded lettuce

Roasted Garlic Feta

  • 150 g (5 oz) feta cheese, block or thick slices
  • 3 cloves garlic, whole or lightly crushed
  • 1 tbsp olive oil
  • ½ tsp dried thyme or oregano
  • Black pepper, to taste

Optional Garnish

  • Fresh parsley
  • Lemon wedges
  • Kalamata olives

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Add the chicken chunks and toss well to coat. Allow the chicken to marinate for at least 20 minutes to absorb all flavors.
  2. Cook the Chicken Souvlaki: Heat a grill pan or skillet over medium-high heat. Grill or cook the marinated chicken pieces for 6 to 8 minutes, turning occasionally until they are golden brown and cooked through.
  3. Roast the Garlic Feta: Preheat your oven to 200°C (400°F). Place the feta cheese in a small baking dish along with the whole/crushed garlic cloves, olive oil, dried thyme or oregano, and a pinch of black pepper. Roast for 12 to 15 minutes until the feta is soft and lightly golden on top.
  4. Assemble the Bowls: Divide your cooked rice, quinoa, or couscous evenly among serving bowls. Layer shredded lettuce, halved cherry tomatoes, diced cucumber, and thinly sliced red onion over the base. Top each bowl with the grilled chicken pieces and spoon roasted garlic feta over everything.
  5. Serve: Garnish your bowls with fresh parsley, kalamata olives, and lemon wedges as desired. Serve warm and enjoy a delicious, wholesome Greek-inspired meal.
