Ingredients

Scale

For the Chicken Souvlaki:

  • 1 ½ lbs boneless, skinless chicken breasts, cut into cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper to taste

For the Garlic Sauce:

  • ½ cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 clove garlic, finely minced
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt to taste

For the Bowl Assembly:

  • 2 cups cooked basmati or jasmine rice (or couscous)
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup Kalamata olives
  • ½ cup crumbled feta cheese
  • 1 tbsp chopped fresh parsley or dill
  • Optional: warm pita wedges or lemon wedges for serving

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Add the chicken cubes and toss until they are evenly coated. Cover the bowl and refrigerate the chicken for at least 30 minutes, up to 8 hours, to allow the flavors to develop.
  2. Cook the Chicken: Preheat a grill pan or skillet over medium heat. If desired, thread the marinated chicken cubes onto skewers for easier grilling. Grill the chicken for 10 to 12 minutes, turning occasionally, until the chicken is golden brown and fully cooked through with no pink inside.
  3. Prepare the Garlic Sauce: In a small bowl, combine Greek yogurt, mayonnaise, finely minced garlic, lemon juice, olive oil, and salt. Stir vigorously until the sauce is smooth and creamy. Chill the sauce in the refrigerator until ready to serve to enhance the flavors.
  4. Assemble the Bowls: Divide the cooked basmati or jasmine rice (or couscous) evenly among serving bowls. Top each bowl with grilled chicken pieces, halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese. Drizzle the prepared garlic sauce over the top and sprinkle with chopped fresh parsley or dill for a fresh finish.
  5. Serve: Add warm pita wedges or lemon wedges on the side to complete the authentic Greek street-food experience. Serve the bowls warm or slightly chilled, depending on your preference. These bowls are perfect for a quick, nutritious weeknight dinner or make excellent meal prep options.

Notes

  • Marinate the chicken for longer (up to 8 hours) for deeper flavor.
  • Use skewers for easier grilling and serving, but it’s optional.
  • For a dairy-free garlic sauce, substitute Greek yogurt and mayonnaise with coconut yogurt or a vegan alternative.
  • Adjust seasoning and garlic level in the sauce to taste.
  • Serve with pita bread warmed in a pan or oven for an authentic touch.
