Ingredients

Scale

For the Chicken Souvlaki

  • lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Creamy Feta Sauce

  • ½ cup crumbled feta cheese
  • ½ cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

For the Bowls

  • 2 cups cooked rice, quinoa, or couscous
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • 2 tbsp Kalamata olives, sliced
  • Fresh parsley or dill, chopped

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade. Add the cubed chicken and toss to coat evenly. Cover and refrigerate for 20–30 minutes to allow flavors to infuse.
  2. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Cook the marinated chicken pieces for 5–7 minutes per side until they are golden brown and fully cooked through, reaching an internal temperature of 165°F (74°C). Remove from heat and let rest briefly.
  3. Prepare the Creamy Feta Sauce: In a blender or food processor, combine crumbled feta cheese, Greek yogurt, minced garlic, lemon juice, olive oil, and salt and pepper to taste. Blend until smooth and creamy. Adjust seasoning as desired.
  4. Assemble the Bowls: Place the cooked rice, quinoa, or couscous as the base in serving bowls. Top with the grilled chicken, cherry tomatoes, cucumber, red onion, and sliced Kalamata olives.
  5. Serve: Drizzle the creamy feta sauce generously over the bowls. Garnish with freshly chopped parsley or dill. Serve warm and enjoy your Greek Chicken Souvlaki Bowls.

Notes

  • Chicken thighs add more flavor and juiciness, but breasts can be used for a leaner option.
  • Marinating the chicken longer (up to 2 hours) intensifies the flavor.
  • You can substitute rice with quinoa or couscous depending on preference.
  • Adjust the amount of garlic in the feta sauce to your taste.
  • Grilling imparts the best smoky flavor, but skillet cooking works well indoors.
  • For a low-fat option, use low-fat Greek yogurt and reduce the olive oil in the sauce.
