Ingredients

Scale

Greek Chicken Souvlaki

  • lb (680 g) boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1½ tsp dried oregano
  • 1 tsp paprika
  • ½ tsp ground cumin
  • Salt and black pepper, to taste

Creamy Feta Yogurt Sauce

  • ¾ cup Greek yogurt
  • ½ cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 small clove garlic, grated
  • Black pepper, to taste

Bowl Components

  • 2½ cups cooked rice or lemon herb rice
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced cucumber
  • ½ cup thinly sliced red onion
  • Optional: chopped parsley, olives, or extra feta

Instructions

  1. Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, cumin, salt, and black pepper until well combined. Add the chicken breasts or thighs and toss to evenly coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.
  2. Cook Chicken: Preheat a grill pan or skillet over medium-high heat. Remove chicken from marinade and cook for 5 to 7 minutes on each side until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (74°C). Let the cooked chicken rest for a few minutes, then slice into strips.
  3. Prepare Feta Yogurt Sauce: In a blender or bowl, combine Greek yogurt, crumbled feta cheese, olive oil, lemon juice, grated garlic, and black pepper. Blend or whisk thoroughly until the sauce is smooth and creamy. Adjust seasoning if needed.
  4. Assemble Bowls: Divide the cooked rice evenly among four bowls. Top each bowl with sliced chicken, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
  5. Finish & Serve: Drizzle the creamy feta yogurt sauce generously over each assembled bowl. Garnish with chopped parsley, olives, or extra feta cheese if desired. Serve the bowls warm for a satisfying Mediterranean meal.

Notes

  • Marinate the chicken longer for more tender and flavorful meat.
  • Use bone-in chicken thighs for juicier results if preferred.
  • Lemon herb rice enhances the Mediterranean flavor but plain rice works well too.
  • Adjust garlic in the sauce based on preference for milder or stronger flavor.
  • Leftover sauce can be stored in the refrigerator for up to 3 days.
  • For a low-carb version, substitute rice with cauliflower rice or a bed of greens.
