Ingredients

Scale

For the Chicken Marinade

  • 2 chicken breasts, cut into cubes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper, to taste

For the Bowl

  • 1 cup cooked rice or quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled

Dill Feta Sauce

  • 1/2 cup Greek yogurt
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: In a medium bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Add the cubed chicken breasts and mix well to coat. Cover and marinate in the refrigerator for at least 20 minutes to allow flavors to infuse.
  2. Cook the Chicken: Preheat a grill or skillet over medium heat. Place the marinated chicken cubes on the grill or skillet, cooking for about 5 to 7 minutes per side, or until the chicken is fully cooked through and has a nice char on the outside.
  3. Make the Dill Feta Sauce: In a small bowl, whisk together Greek yogurt, crumbled feta cheese, chopped fresh dill, lemon juice, salt, and pepper until smooth and creamy. Adjust seasoning to taste and set aside.
  4. Assemble the Bowls: Start by placing cooked rice or quinoa as the base of each bowl. Top with the grilled chicken, cherry tomatoes, diced cucumber, thinly sliced red onion, and sliced Kalamata olives.
  5. Finish and Serve: Drizzle the prepared dill feta sauce over the assembled bowls. Sprinkle additional crumbled feta cheese on top if desired. Serve immediately and enjoy the fresh, Mediterranean flavors.

Notes

  • Marinate the chicken for up to 2 hours for more intense flavor.
  • Use quinoa instead of rice for a gluten-free option.
  • Grill chicken on skewers for a more authentic souvlaki presentation.
  • Fresh dill is preferred over dried for the sauce to boost flavor.
  • Store leftovers separately to maintain freshness, especially the sauce.
