Garlic Feta Sauce

  • 1 cup Greek yogurt
  • ¾ cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 12 cloves garlic, finely grated (to taste)
  • 23 tbsp water (to thin)
  • Black pepper to taste

  • 1½ cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • ¼ cup thinly sliced red onion

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Add the chicken thighs or breasts and toss well to coat all pieces evenly. Cover and marinate in the refrigerator for at least 30 minutes, up to 12 hours, to enhance flavor and tenderness.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat until hot. Place the marinated chicken on the pan and cook for 5 to 7 minutes per side, or until the chicken is golden brown and fully cooked through.   3. Make Garlic Feta Sauce: In a blender or mixing bowl, combine Greek yogurt, crumbled feta cheese, olive oil, lemon juice, and finely grated garlic. Add water gradually to thin the sauce to a creamy consistency. Blend or whisk until smooth. Season with freshly ground black pepper to taste.
  4. Assemble the Bowls: Divide the cooked rice, quinoa, or lemon rice evenly among serving bowls. Top each with sliced chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and kalamata olives if using.
  5. Finish & Serve: Drizzle the garlic feta sauce generously over the assembled bowls. Garnish with fresh parsley or dill and serve with extra lemon wedges on the side for added brightness.
