For the Chicken Souvlaki:
- 2 chicken breasts, cut into cubes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper, to taste
For the Bowl:
- 1 cup cooked rice or quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
For the Herb Feta Sauce:
- 1/2 cup Greek yogurt
- 1/4 cup feta cheese, crumbled
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh dill, chopped
- 1 tsp lemon juice
- Salt and pepper, to taste
- Marinate the Chicken: In a bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Add the chicken cubes and toss well to coat. Let the chicken marinate for at least 20 minutes to absorb the flavors.
- Cook the Chicken: Preheat a grill pan or skillet over medium heat. Place the marinated chicken pieces on the grill and cook for 5 to 7 minutes per side, or until fully cooked through and lightly charred on the outside.
- Prepare the Herb Feta Sauce: In a small bowl, mix together Greek yogurt, crumbled feta, olive oil, chopped parsley, chopped dill, lemon juice, salt, and pepper. Stir until smooth and creamy.
- Assemble the Bowls: Start with a base of cooked rice or quinoa in each bowl. Top with the cooked chicken, cherry tomatoes, diced cucumber, red onion slices, and Kalamata olives.
- Serve with Sauce: Drizzle the herb feta sauce generously over the contents of the bowl. Garnish with extra crumbled feta cheese if desired and serve immediately for a vibrant and satisfying meal.
