Ingredients

Scale

For the Chicken Souvlaki

  • 500 g boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

For the Herbed Yogurt Sauce

  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill or parsley
  • 1 clove garlic, minced
  • Salt and black pepper to taste

For the Bowls

  • 1 cup cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup Kalamata olives, pitted and halved
  • ¼ cup crumbled feta cheese
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Add the bite-sized chicken pieces and toss well to coat evenly. Cover and refrigerate, allowing the chicken to marinate for at least 30 minutes, or up to 2 hours for deeper flavor infusion.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Place the marinated chicken pieces on the pan and cook for 5 to 7 minutes on each side until fully cooked through and golden brown on the outside. Remove from heat and let rest briefly.
  3. Prepare the Herbed Yogurt Sauce: In a small bowl, stir together plain Greek yogurt, lemon juice, minced garlic, chopped fresh dill or parsley, salt, and black pepper until smooth and well combined. Adjust seasoning to taste.
  4. Assemble the Bowls: Evenly distribute the cooked rice, quinoa, or couscous into serving bowls. Top each bowl with the grilled chicken pieces, halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese. Drizzle generously with the prepared herbed yogurt sauce and garnish with fresh parsley or dill.
  5. Serve: Serve the bowls immediately while the chicken is warm to enjoy the fresh and vibrant Mediterranean flavors at their best.

Notes

  • For best results, marinate the chicken for the full 2 hours to deepen the flavors.
  • Chicken can be grilled outdoors on a barbecue or cooked on a stovetop grill pan.
  • Use Greek yogurt for a thicker, creamier sauce; regular yogurt can be used but may be thinner.
  • Feel free to swap fresh dill for parsley in the sauce according to preference.
  • This bowl is versatile and can be customized with your choice of grain or additional veggies.
