Ingredients

Scale

For the Chicken Souvlaki:

  • 1 lb (450g) boneless skinless chicken breast or thighs, cubed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper, to taste

For the Spicy Lemon Feta Sauce:

  • ½ cup crumbled feta cheese
  • ¼ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • ¼ tsp chili flakes (adjust to taste)
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

For the Bowls:

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • ½ cup Kalamata olives (optional)
  • Fresh parsley or mint for garnish

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine the cubed chicken with olive oil, minced garlic, lemon juice, lemon zest, dried oregano, paprika, salt, and black pepper. Toss well to coat all the pieces. Allow the chicken to marinate for at least 15 minutes to absorb the flavors.
  2. Cook the Chicken: Thread the marinated chicken onto skewers if desired, or cook directly in a heated skillet or grill pan over medium-high heat. Cook for 8–10 minutes, turning occasionally, until the chicken is golden brown and fully cooked through.
  3. Prepare the Spicy Lemon Feta Sauce: In a small bowl, combine crumbled feta cheese, Greek yogurt, lemon juice, olive oil, chili flakes, minced garlic, salt, and pepper. Stir until smooth and creamy. Adjust seasoning and chili flakes to your taste preference.
  4. Assemble the Bowls: Start by placing your choice of cooked rice, quinoa, or couscous at the bottom of each serving bowl. Top with the grilled chicken souvlaki pieces, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives if using.
  5. Finish and Serve: Generously drizzle the spicy lemon feta sauce over the assembled bowl. Garnish with fresh parsley or mint leaves. Serve warm and enjoy your fresh, Mediterranean-inspired chicken souvlaki bowl.

Notes

  • For a gluten-free option, choose quinoa or rice instead of couscous.
  • Chicken thighs can be used instead of breast for juicier meat.
  • Adjust chili flakes in the sauce to control spiciness according to your preference.
  • Skewers are optional; the chicken can be grilled or cooked in a pan directly.
  • The sauce can be made ahead and stored in the refrigerator for up to 2 days.
  • Fresh herbs like mint or parsley add a refreshing finish but can be omitted if unavailable.
