For the Chicken Souvlaki:

  • 1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

For the Tzatziki Feta Sauce:

  • ½ cup Greek yogurt
  • ¼ cup crumbled feta cheese
  • 1 small cucumber, finely grated and drained
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Salt and black pepper, to taste

For the Bowls:

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ red onion, thinly sliced
  • ¼ cup Kalamata olives, pitted and halved
  • Fresh parsley or dill, for garnish
  • Lemon wedges, for serving

Instructions

  1. Marinate the Chicken: In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Add the chicken pieces and toss well to coat. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to infuse.
  2. Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Place the marinated chicken pieces on the pan and cook for 4–5 minutes on each side until they develop a golden brown color and are cooked through, reaching an internal temperature of 165°F (74°C).
  3. Prepare the Tzatziki Feta Sauce: In a small bowl, combine Greek yogurt, crumbled feta, finely grated and drained cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Mix thoroughly and adjust the seasoning according to your taste preferences.
  4. Assemble the Bowls: Divide the cooked rice or quinoa evenly between serving bowls. Top each with grilled chicken pieces, cherry tomatoes, diced cucumber, thinly sliced red onion, and Kalamata olives. Drizzle generously with the prepared tzatziki feta sauce over the top.
  5. Garnish and Serve: Sprinkle fresh parsley or dill over the bowls as garnish and serve immediately with lemon wedges on the side to squeeze over for added brightness.
