Ingredients

Scale

Greek Chicken Souvlaki

  • lb (680 g) boneless, skinless chicken breasts or thighs, cut into chunks
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1½ tsp dried oregano
  • 1 tsp paprika
  • ½ tsp ground cumin
  • Salt and black pepper, to taste

Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ cucumber, grated and excess liquid squeezed out
  • 1 small garlic clove, grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tbsp chopped fresh dill (optional)

Bowl Components

  • 2½ cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced cucumber
  • ½ cup thinly sliced red onion
  • Optional: Kalamata olives or crumbled feta

Instructions

  1. Marinate Chicken: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and black pepper. Add the chicken chunks and toss well to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to overnight to deepen the flavors.
  2. Cook Chicken: Heat a grill pan or skillet over medium-high heat. Add the marinated chicken pieces and cook for 5 to 7 minutes on each side, until the chicken is golden brown and cooked through. Remove from heat and let the chicken rest for a few minutes before slicing into bite-sized pieces.
  3. Prepare Tzatziki: In a small mixing bowl, combine Greek yogurt, grated and drained cucumber, grated garlic, lemon juice, olive oil, salt, pepper, and fresh dill if using. Stir thoroughly until the sauce is smooth and creamy.
  4. Assemble Bowls: Divide the cooked rice or quinoa evenly among serving bowls. Top each bowl with sliced chicken, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion. Add kalamata olives or crumbled feta cheese if desired.
  5. Serve: Drizzle each bowl generously with the prepared tzatziki sauce. Serve the bowls warm for a delicious and balanced Mediterranean meal.

Notes

  • Marinate the chicken overnight for more intense flavor and tenderness.
  • Use quinoa instead of rice for a higher protein and gluten-free option.
  • Drain the grated cucumber well to prevent watery tzatziki sauce.
  • Add fresh herbs like parsley or mint to the bowl for extra freshness.
  • For a low-fat version, use low-fat Greek yogurt and reduce olive oil.
  • Leftover chicken can be stored in the fridge for up to 3 days.
