Ingredients

Scale

For the Greek Chicken Souvlaki

  • 700 g boneless skinless chicken thighs or breasts, cut into strips
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper

For the Creamy Spicy Feta Sauce

  • 200 g feta cheese, crumbled
  • ½ cup plain Greek yogurt
  • 2 tbsp olive oil
  • 12 tbsp chili paste or harissa (adjust to taste)
  • 1 tsp lemon juice
  • ½ tsp smoked paprika
  • Black pepper to taste

For the Wraps

  • 6 soft pita breads or flatbreads
  • 1 cup shredded lettuce
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced

Optional Garnish

  • Fresh parsley or dill
  • Lemon wedges

Instructions

  1. Prepare the Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Whisk together until well blended.
  2. Marinate the Chicken: Add the chicken strips to the marinade and toss well to coat evenly. Cover and let marinate for at least 30 minutes to absorb all flavors.
  3. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Place the marinated chicken strips on the pan and cook for 6–8 minutes, turning occasionally, until the chicken is golden, lightly charred, and fully cooked through.
  4. Make the Creamy Spicy Feta Sauce: In a food processor or mixing bowl, combine crumbled feta cheese, Greek yogurt, olive oil, chili paste or harissa, lemon juice, smoked paprika, and black pepper. Blend or mix until the sauce is smooth and creamy with a slightly spicy kick.
  5. Warm the Pita Breads: Slightly heat the pita breads in a dry skillet or oven until soft and pliable for easy wrapping.
  6. Assemble the Wraps: Spread a generous layer of the creamy spicy feta sauce on each pita. Add the grilled chicken strips, followed by shredded lettuce, diced cucumber, halved cherry tomatoes, and thinly sliced red onion for fresh crunch and flavor.
  7. Garnish and Serve: Fold the pita breads into wraps, garnish with fresh parsley or dill and serve with lemon wedges on the side for squeezing over the wraps for an extra burst of freshness. Enjoy warm.

Notes

  • Marinate the chicken for longer, up to 2 hours, for more intense flavor.
  • Adjust the chili paste quantity in the sauce to control the spiciness according to your preference.
  • Use chicken thighs for juicier meat; breasts can be used for a leaner option.
  • These wraps are great served with a side of Greek salad or roasted potatoes.
  • To keep wraps warm before serving, wrap them in foil and place in a low oven (around 100°C) briefly.
