  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowl Base

  • 3 cups cooked jasmine or basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/2 cup shredded romaine lettuce
  • 1/3 cup crumbled feta cheese

For the Garlic Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 2 cloves garlic, finely grated
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill (optional)
  • Salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Add the diced chicken and toss well ensuring all pieces are coated evenly. Cover and marinate for at least 20 minutes, or up to 2 hours in the refrigerator for more intense flavor.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6 to 8 minutes, stirring occasionally until the chicken pieces are golden brown and fully cooked through. Remove from heat and set aside.
  3. Prepare the Garlic Yogurt Sauce: In a small bowl, whisk together plain Greek yogurt, finely grated garlic, lemon juice, olive oil, chopped fresh dill (if using), and salt to taste. Stir until the sauce is smooth and creamy, then refrigerate until ready to serve.
  4. Assemble the Bowls: Divide the cooked jasmine or basmati rice evenly among serving bowls. Top each with cooked chicken pieces, halved cherry tomatoes, diced cucumber, thinly sliced red onion, shredded romaine lettuce, and crumbled feta cheese.
  5. Drizzle and Serve: Spoon generous amounts of garlic yogurt sauce over each bowl. Serve immediately while the chicken is warm, and enjoy the fresh Mediterranean flavors.
