For the Greek Chicken

  • lb boneless, skinless chicken thighs or breasts
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1½ tsp dried oregano
  • 1 tsp smoked paprika
  • ¾ tsp salt
  • ½ tsp black pepper

For the Roasted Garlic Feta Sauce

  • 1 whole head garlic
  • 1 tsp olive oil (for roasting)
  • ¾ cup crumbled feta cheese
  • ½ cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 12 tbsp water (to thin if needed)
  • Black pepper, to taste

For the Wraps

  • 4 large pita breads or flatbreads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • Fresh parsley or dill, chopped

Instructions

  1. Roast the garlic: Preheat your oven to 200°C (400°F). Slice off the top of the garlic head to expose the cloves, drizzle with 1 tsp olive oil, then wrap tightly in foil. Roast in the oven for 30–35 minutes until the garlic is soft and caramelized. Allow to cool before squeezing out the roasted garlic cloves for the sauce.
  2. Marinate the chicken: In a mixing bowl, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, 3 cloves minced garlic, 1½ tsp dried oregano, 1 tsp smoked paprika, ¾ tsp salt, and ½ tsp black pepper. Add the chicken thighs or breasts, making sure they are fully coated. Cover and marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
  3. Cook the chicken: Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 5–7 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Remove from heat and let the chicken rest for 5 minutes before slicing thinly.
  4. Prepare the roasted garlic feta sauce: In a blender or food processor, combine the squeezed roasted garlic cloves, ¾ cup crumbled feta, ½ cup Greek yogurt, 1 tbsp lemon juice, 1 tbsp olive oil, and black pepper to taste. Blend until smooth and creamy. If the sauce is too thick, add 1–2 tablespoons of water gradually to reach a drizzleable consistency.
  5. Assemble the wraps: Warm the pita breads or flatbreads briefly. Spread a generous amount of roasted garlic feta sauce on each, then layer with sliced chicken, shredded lettuce, diced tomatoes, diced cucumber, and thinly sliced red onion. Garnish with chopped fresh parsley or dill for added freshness and aroma. Roll up or fold as preferred to serve.
